Hot Fondant au Chocolat
This post is for my little soul mate Alexi.. We celebrated 20 years of friendship this year (yes we are silly like that), and today is her birthday.. Alex and I grew up in Paris and then moved to New York together.. When I moved away it was a real heartbreaker.. A little while ago she asked me for a fondant recipe and I thought today is the perfect day to post it.. Happiest Birthday my Alexi.. I miss living with you every single day..
The most important ingredient in this recipe is obviously the chocolate.. So use chocolate you actually like to eat on it's own rather than just a baking choco to bake the yummiest fondant..
Makes 4-5 fondants
90g of butter
100g of dark chocolate
100g of milk chocolate
2 TBL of flour (sifted)
2 eggs
2 egg yolks
3 TBL white sugar
Preheat oven to 200c, butter the ramekins and set aside.. Melt the butter and choco over a double bath and let it cool a little.. In the mean time whisk together eggs and sugar until creamy.. Add it to the cooled choco and then gently fold in the flour.. Pour the mixture into the ramekins and bake in the oven for 6-8 minutes.. Serve immediately with a scoop of ice cream if you wish.. Simply delicious!
