Langoustine and Prawn Tagliolini
One of my favourite pasta dishes.. Quick and simple to make, yet so incredibly tasty.. I don't like my pasta drenched in sauce, but if you do then please use more sauce or less pasta in this recipe...
Serves 3-4 persons
1 onion chopped
5 crushed garlic cloves
1/2 small red chili sliced thinly (optional)
1 cup of white wine
1 cup of peeled tomatoes (+ juice)
16 large prawns (deshelled and deveined)
8 langoustines (cleaned or whole)
400g of taglioline pasta (or linguini, spaghetti, etc)
1/2 cup of chopped parsley
oilive oil
salt & pepper to taste
Cook pasta in boiling water until al dente (when draining, reserve 1/4 cup of the pasta water).. In the meantime heat olive oil in a pan, cook onions until they are translucent, add garlic, chili and cook for a minute or so.. Add the wine and let it boil gently before tossing in tomatoes & their juices, season and simmer for a few minutes..
Add the prawns & langoustines and cook for about 2 minutes, just until tender, then toss in the pasta, reserved pasta water and simmer to combine everything.. Sprinkle with parsley and drizzle some olive oil (or spicy oil).. Serve immediately.. Voila!
