Yummy Banana & Pecan Muffins
I love muffins with my coffee in the morning.. And earlier today I was craving banana nut muffins, but really couldn't afford to over indulge as I ate a little too much this w-e.. So I adjusted my basic recipe to make it less naughty (using less butter and sugar) but still enjoying muffin yumminess!
Makes about 6 muffins (depending on how large you make yours)
3 ripe bananas (mashed by hand)
3/4 cup flour
1 egg
1/3 cup brown sugar
2 TBL honey
3 TBL softened butter
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2 handfuls of crushed pecans (and some for decorating)
Preheat your oven to 180C.
In a bowl whisk the egg, butter & sugar until creamy, then add the mashed bananas.. Sift together flour, spices, salt, baking powder and soda.. Then fold the flour mixture, crushed pecans & honey into the banana mixture (pls don't over mix)..
Now pour the batter into a muffin pan, (use parchment paper, or a non stick muffin pan) and bake for 14-18mins.. Just poke with a tooth pic to check if muffins are ready, and enjoy these little delicacies on their own, with some jam, peanut butter or anything you feel like! Yumm!
