Fresh Salmon Avocado Tartare
I love tartares, they are full of flavor, light and so simple to make.. We're not big fans of uncooked coriander at home, so I use parsley, but if you wish, use coriander instead..
Serves 2 persons
200g of salmon
juice of half a lemon
1 tsp freshly grated ginger
3 tsp light soya sauce
1 tsp fish sauce
1/2 tsp sesame oil
1 tsp fish sauce
1/2 tsp sesame oil
1 chopped green onion
1 TBL chopped parsley
cracked pepper
a little chili (optional)
1/2 avocado
Cut the salmon in fresh cubes and toss them in a bowl with the ginger, parsley, 2 tsp soya sauce, sesame oil, fish sauce, lemon juice, onion, pepper, chili and combine everything well.. Set it aside.. Now mash up the avocados wish a fork, add 1/2 tsp soya and 1/2 tsp lemon..
Place a big piece of cling film loosely in a ramekin.. Add a little avocado first, then the salmon mixture and press everything firmly together.. Cover with cling film and chill for at least 30 minutes.. When you are ready to serve, turn the ramekins upside down on a plate, use the cling film to help you detach the tartare from the base, then sprinkle with some green onion and serve..
