Caramelized Red Plums & Ricotta Basil Cream
This morning I felt like something warm, yet sweet and fruity.. So even though I have this little dish for dessert usually, today it was for breakfast!
Serves 2-3
- 3 plums, halved
- 3 TBL of brown sugar
- some olive oil
- 3 TBL ricotta cheese
- 1 TBL honey
- 4 fresh basil leaves and some for garnish
Sprinkle the plums on the fleshy side with sugar and heat a little olive oil in a regular or grilling pan.. Place the plums flesh side down and grill them for about 8-10 minutes, or until they are slightly soft (depends on the ripeness of the fruit really)..
Make your ricotta sauce in the mean time.. In a blender, combine the ricotta, honey and basil until it is smooth and set aside.. Now plate your little dish.. Place the plums in a plate and add a generous dollop of the ricotta cream.. Delicious!
