Mini Pecan Nutella Cake
I tweeted about a Pecan Nutella Cake I made for Phiras yesterday for his birthday and some of you asked me to share it.. We're usually together for his birthday, but he's in London this time, so I decided to make a mini cake, and blow the candle for him!
Serves 2
- 100g ground pecans
- 50g caster sugar
- 4 egg whites
- 1/4 tsp cinnamon
- 1 TBL flour
- Nutella a go-go! Basically as much as you like
Preheat your oven to 180C and line a small baking dish with parchment paper
Beat the egg whites until they form firm peaks, then add the sugar and whisk until it turns glossy.. Add the pecans and cinnamon, and gently fold in the flour.. Pour the batter in the baking dish and smoothen it out.. Bake for 15-18 minutes..
Let the cake cool completely, then slice it in three equal parts and spread a generous amount of Nutella on each slice.. Stack them up like a club sandwich and voila, your own mini cake!

ReplyDeleteNeha, I use TBL for tbsp (tablespoon) but like to put it in capital letters so nobody confuses it with tsp (teaspoon). And don't worry- this cake doesn't need much flour :) Enjoy!
