Tomato & Cheese Puff Pizza

I really don't function too well if I don't get enough sleep.. I can't focus properly, become very sensitive and crave junk food.. And since work is quite hectic at the moment, I'm not getting my 8 hours, and so I came back home craving pizza.. The thing is, if you really want the perfect pizza dough, you have to let it rest and rise for at least 3 hours.. But I was starving and just couldn’t wait that long, and only had mature cheddar in the fridge.. So I took a short cut, and made a puff pastry pizza.. It's not an authentic Italian one, but it tastes lovely anyways and does the job giving you your pizza-ish fix.. So my real, rustic Italian Pizza will have to wait for next time..

Makes 2 
  • 2 puff pastry sheets, thawed
  • 1 tomato, cut into chunks
  • 1 cup mature cheddar, grated (you can use mozzarella, Swiss, or any cheese you like that melts)
  • 1 egg 
  • fresh basil
  • olive oil
  • salt and cracked pepper to taste

Preheat you oven at 180C

Roll out the pastry sheet into a round shape, or a square if you prefer, it really doesn't have to be perfect.. Place it on a baking tray with parchment paper and prick with a fork around it, creating a border.. In a bowl, toss the chopped tomatoes, cheese, a little olive oil, salt and pepper to taste and spread it over the puff pastry.. Then lightly beat an egg, and brush the edge of the pizza.. Place it in the oven and bake for 15-20 minutes, until it turns golden brown.. Once it's ready, top it with fresh basil leaves and a drizzle of olive oil.. Voila, quick-fix pizza!



Tip: You can also make these smaller in size and offer them as little snacks, canapes.. And of course use one million different types of toppings!
