Mini Cheesecake Brownies

My apologies for the little delay in posting a new recipe, but it has been one heck of month with the launch of the latest branch of our scrumpitous bakery.. And to celebrate that, I'm posting one of my popular recipes from the Harper's December issue.. These little chocolate bites are truly heavenly.. Chocolate and Cheese, probably my two favourite things on the planet ;)
Serves 6 – 8 (canapés)
- 240g dark chocolate (at least 75%)
- 60g milk chocolate
- 100g butter
- 1 cup sugar
- ½ tsp vanilla
- ½ tsp salt
- 2 tbsp cocoa
- ½ cup flour
- 3 eggs
Cheese mixture:
- 300g Philadelphia
- ¼ cup castor sugar
- 2 egg yolks
- ½ tsp vanilla
Preheat the oven to 180C. In a double boiler, melt the chocolate and butter. Remove the bowl from the heat and add the sugar, vanilla, eggs, and combine all ingredients well together. Sift the flour, cocoa and salt, then add it to the chocolate mixture. In another bowl, whisk the cream cheese, eggs, sugar and vanilla until smooth. Line a square baking dish with parchment paper and pour the brownie mixture in it. Then pour the cheese mixture on top, and using a fork just swirl the cheese into the chocolate. Bake for 30 - 35 minutes, and let it cool before you slice small bite sized squares. Delicious!
