Quick Mushroom and Avocado Salad
Dubai is absolutely gorgeous during this time of year, and a beautiful sunny day calls for a yummy salad bowl.. So as I'm doing one million things left, right and center, I took a little break and whipped up this quick salad which I munched on while sitting on my terrace :)
Easy. Prep & Cook Time 10 minutes.
Serves 2
- 1 pack mixed lettuce
- 1 pack chestnut mushrooms, (or a bunch of mixed mushrooms), cut in halves
- 2 - 3 avocados, cut into chunks
- 1 TBL Dijon mustard
- 2 TBL lemon juice
- 1/3 cup nut or sunflower oil
- pinch of sugar, salt & cracked pepper to taste
- 1/2 tsp of mixed herbs
In a frying pan, heat a little olive oil, season the mushrooms with salt and pepper and saute them for just a minute or so to release the flavours.. Let them cool slightly, then toss with the lettuce, avocado and dressing.. Enjoy with a piece of grilled country bread.. Delicious!
Tip: you can add a tin of canned tuna, which makes it more of a main course.. I did that with the leftovers and had that for dinner just now :)
