Grilled Halloumi Salad

I just got back from Beirut and a friend's beautiful wedding.. The week flew by and I didn't get to do everything I hoped to, but I spent a lovely week with family, friends, gorgeous weather and of course phenomenal food! So after over indulging a tad too much last week, it's time for a salad.. This is a delicious, fresh and hearty little meal perfect for a quick lunch or dinner, or to serve with BBQ as you can grill the zucchini and the cheese right then and there.. And the sweet strawberry vinaigrette goes perfectly with the salty halloumi cheese!
Easy. Prep & Cook Time:
Serves 4
- 6 zucchinis, cut into thin rounds
- 600g Halloumi cheese, cut into squares
- 3 pack of cherry tomatoes, cut in halves
- a handful of toasted pine nuts
- Strawberry vinaigrette:
- 2 tbsp Dijon mustard
- 2 tbsp cider vinegar
- 6 tbsp nut oil
- 1 - 2 tbsp strawberry marmalade
- pinch of salt and pepper
First prepare your dressing by whisking mustard and vinegar until it dissolves, then add the oil and seasoning, and finish up by whisking in the marmalade. Set aside. Cut the zucchinis into thin rounds, brush them with a little olive oil and season with salt and pepper. Grill or saute them for a few minutes, just until they soften and set them aside.
Grill or fry the Halloumi for a few minutes just until golden brown, then toss with the zucchini, cherry tomatoes and vinaigrette. Sprinkle with pine nuts and serve immediately.
