Crunchy Muesli Cookies
My dad was in town for just a day yesterday.. I was so happy to see him that instead of letting him dine out for a business meeting, I decided to cook for them last minute at home.. There's nothing like cooking for daddy, I don't know why but I got so emotional and was about to burst into tears when he left.. Weirdo me!
Anyways, it's too early to post a savoury recipe from one of last night's dishes, so I'm sharing the Muesli Cookies I made last week.. I was in an oatmeal cookie mood, but had no oatmeal, so I went through the pantry and found muesli! I picked out all the raisins (I don't like raisins in my sweets at all!), and came up with this simply beautiful & crunchy cookie.. Perfect with a cup of coffee :)
- 1 1/3 cup flour
- 1/3 cup castor sugar
- 1/3 cup brown sugar
- 1 egg
- 3/4 cup butter, softened
- 1/2 tsp baking soda
- 1/2 cup of muesli
- handful of mixed nuts, crushed (almonds, hazelnuts, peanuts...)
- 2 tsp lemon zest
- generous pinch of salt
Preheat the oven to 180C. With an electric mixer combine butter, white & brown sugar, zest, and egg until smooth. Add the flour, salt and soda until well combined, and gently fold in the muesli and nuts at the end.
Line a baking tray with parchement paper and place the balls of dough, flattened a little, evenly on the tray. (This recipe makes between 12 - 14 cookies, so you can spoon out the portions before making the balls.) Bake for 10 - 12 minutes until golden brown. Yumm!
