Bresaola, Melon & Basil with Tartare Dressing

I must have had one of the laziest weekends ever.. I came back home Thursday night and have not left the house since! But to be honest with you, I really needed to take it a little easier as I had such a hectic schedule these past weeks.. And as much as I love to be out and about, I must admit I'm a very homy person :) So I'm always amazed how warm it is end of September in Dubai - still.. I'm not used to it yet and am actually looking forward to it cooling down a little.. So what better to munch on than a refreshing dish like this one?
Super Easy! Prep & Cook Time: ~10 minutes
Serves 6 – 8
- 1 melon, thinly sliced
- 250g Bresaola, thinly sliced
- 2 tbsp Tartare soft cheese
- 2 tbsp sherry vinegar
- 6 tbsp olive oil
- 1 tbsp honey
- fresh basil leaves
- salt & cracked pepper to taste
Make the dressing
by whisking the tartare and vinegar until smooth. Add the honey, then the olive
oil and season to taste.
Prepare the plate
by laying the slices of melon first, cover with the bresaola slices, sprinkle a
few basil leaves, and drizzle the dressing on top. Enjoy!
